Vanilla Medjool Date Balls


  • 1 cup (175 g/250 mL) Natural Delights Medjool Dates, pitted and chopped (about 10 dates)
  • ½ cup (125 mL) orange juice
  • ¼ cup (28 g) butter
  • ¼ cup (55 g) packed brown sugar
  • 1 tbsp. vanilla extract
  • 1 ½ cup (150 g) chocolate cookie crumbs
  • ½ cup (36 g) sweetened coconut flakes
  • ⅔ cup (134 g) granulated sugar


  1. Line a baking sheet with parchment or wax paper.
  2. Bring the dates, juice, butter and brown sugar to a simmer over medium heat and cook for about 12 minutes or until very soft and thickened, stirring occasionally. Stir in the vanilla; set aside to cool completely. 
  3. Stir in the cookie crumbs and coconut. Using 1 rounded measuring teaspoon, scoop out the mixture and roll into balls. 
  4. Place the sugar in a shallow bowl. Roll the balls in the sugar until completely coated and place on a prepared baking sheet. Repeat with the remaining mixture.
  5. Cover and refrigerate for at least 2 hours, or until set and firm. Package in single layers, in an airtight container or in cookie tins. May be refrigerated for up to 3 weeks.
