Tropical Energy Bars


  • 15 Natural Delights Medjool dates, with pits removed 
  • 1 cup (100 g) walnuts, in pieces 
  • 1 cup (60 g) unsweetened coconut (coconut shavings, chips or shredded coconut will also work) 
  • 1/2 cup dried mango, chopped 
  • 1/2 cup dried pineapple, chopped


  1. Place all ingredients except for 1/2 cup of the coconut into a large food processor. 
  2. Pulse the ingredients a few times, stirring if the dates begin to clump together. 
  3. Process until the ingredients begin to form a large ball of “dough” (Stir if necessary but continue to process until a thick dough forms). 
  4. Line a 20 x 20 cm baking dish with plastic wrap. 
  5. Sprinkle remaining coconut onto plastic wrap. 
  6. Press a large ball of dough into the dish, shaping it into a large square. 
  7. Cover and chill for an hour or overnight. 
  8. Cut into squares, flip over and enjoy.
