Runner’s Energy Drops

Ingredients

  • 227 g Natural Delights Medjool dates, pitted
  • 1 tbsp. warm water 
  • ½ tsp. sea salt
  • 2 tbsp. Goji berries or dried currants or dried cranberries
  • 2 tbsp. pumpkin seeds
  • 2 tbsp. chia seeds
  • ½ cup almonds (or any favorite nut)

Powders for coating: shredded coconut or coconut flour, Matcha green tea powder, powdered peanut flour, or cocoa powder. You will need about ¾ cup total.

NB: In Canada, Matcha Green Tea Powder may be found in a number of Asian grocery stores or health specialty shops. Or you may order it on-line from sources such as: www.avivaheath.com, www.well.ca, www.tealyra.ca, www.davidstea.com, www.tealyra.ca, www.amazon.ca.


Preparation

  1. Place all the ingredients into the bowl of a food processor and process, using the pulse button, and scraping down the sides of the bowl as you go.  
  2. Turn the mixture out onto parchment paper. 
  3. Form the mixture into two rolls of 25 cm in size, using some parchment paper to cover and prevent the mixture from sticking to your hands. 
  4. Slice each roll into 10 pieces approximately.
  5. Form each slice into a drop (like a chocolate kiss shape). 
  6. Roll the slices in your desired powder in a small bowl. 
  7. Store in an airtight container.

Keeps in your pantry for 2-3 weeks or you can refrigerate for longer storage.
