Roll Your Own Energy Balls

Ingredients

  • 1 cup Medjool dates, pitted and chopped 
  • 1 tablespoon warm water
  • ½ teaspoon sea salt
  • 2 tablespoons dried cranberries
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons chia seeds
  • ½ cup almonds (or any favourite nut - try 1/4 cup almonds and 1/4 cup cashews!)
  • Topping ideas: crushed freeze-dried strawberries, mango or raspberries, rice krispies gently crushed, any nuts (blitzed in a food processor - pistachios are great), desiccated unsweetened coconut, goji powder, pomegranate powder, hemp seeds, chia seeds.

Preparation

  1. Place all ingredients in the bowl of a food processor and process using the pulse tab, scraping down the sides of the bowl as you go. 
  2. Turn the mixture out onto parchment paper. 
  3. Form into a 25 cm roll,  using paper to cover the mixture to prevent it from sticking to your hands. 
  4. Slice the roll into roughly 12 pieces.
  5. Form each slice into a ball.
  6. Add each topping ingredient into a cupcake baking pan. Roll each energy ball in your desired topping mix. 

Store the energy balls in an airtight container. Keeps in your pantry for 2-3 weeks, or refrigerate for longer storage.
