Protein-Packed Fresh Medjool Date Chia Pudding Parfait


  • 1 1/3 cup plain Greek yogourt
  • 1/4 cup date paste (see recipe)
  • 1/4 cup white (or black) chia seeds
  • 1/2 cup unsweetened almond milk
  • 1 cup sliced strawberries
  • 1 cup Medjool dates - pitted and roughly chopped
  • 4 tablespoons creamy/smooth peanut butter
  • 1 1/2 cup granola


  1. In a medium size bowl, combine the yogourt, chia seeds, date paste and unsweetened almond milk. Cover and refrigerate overnight. 
  2. In the morning, slice the strawberries and Medjool dates. Grab 4 glasses, and start layering each glass with approximately 2 tablespoons of the granola. Add about 3 tablespoons of the chia seed pudding, a scoop of peanut butter, another 2 tablespoons of granola, some of the Medjool date chunks and the sliced strawberries. Repeat the process, starting with the chia seed pudding.
