PB and Date Star Sandwich

PB and Date Star Sandwich


  • 1 cup peanut butter
  • 8 dates, pitted and roughly chopped
  • 1 teaspoon vanilla
  • ¼ teaspoon salt
  • 10 slices white farmhouse bread
  • 10 strawberries
  • 10 blueberries


  1. Place the peanut butter, dates, vanilla, and salt in a food processor. Blitz until smooth and spreadable. Add a bit of canola oil, if necessary, to loosen the mixture slightly. 
  2. Spread the mixture over 5 pieces of bread. Top with the remaining 5 pieces of bread. For best results, chill in the refrigerator for at least 30 minutes. 
  3. Cut 2 star shapes from each of the sandwiches with a cookie cutter. 
  4. Use a small skewer or wooden toothpick to add the fruit. Poke the skewer or toothpick first through a blueberry, then a strawberry, and then into the center of the star sandwich.
