Medjool Date Truffles


  • 3 cups (525 g) Natural Delights® Medjool Dates, pitted and chopped (about 30 dates)
  • 2 shots espresso, brewed with 12 oz (355 mL) water or strongly brewed coffee
  • 1 cup (125 g) pecans, chopped finely
  • ½ cup (30 g) coconut, sweetened or unsweetened, shredded 
  • 1 tsp. cinnamon
  • ¾ tsp. orange or lemon zest, finely grated 
  • ½ cup (64 g) or more unsweetened cocoa powder for dusting


  1. Soften the dates by soaking them for 3 to 5 minutes in 12 oz (355 mL) of warm (not hot) espresso or coffee. Drain the dates and discard the liquid. Mash the dates on a cutting board with a fork to form a paste. 
  2. Transfer to a large mixing bowl and stir in the pecans, coconut, cinnamon and zest. Mix well and shape into 1 inch (2.5 cm) balls.
  3. Place the cocoa powder in a shallow bowl. Roll the truffles in the cocoa powder to coat.


  • If you do not like the taste of coffee, use plain water to soften the dates.
  • You may substitute the pecans with another nut; walnuts work well too. 
  • For a sweeter, firmer coating than the cocoa powder, melt 12 oz (340 g) of the semi-sweet chocolate in a double boiler and dip the truffles to coat them. Allow the truffles to cool for 30 minutes to harden
