Medjool Date Tahini Truffles



  • 12 Natural Delights® Medjool Dates, pitted 
  • ½ cup 70% dark chocolate, melted
  • 5 tablespoons tahini (approximately 1/2 to 1 teaspoon per date)


  • 1/4 cup bright green pistachios, chopped
  • 1 tablespoon flake salt


  1. Open each Medjool date lengthwise and fill it with 1/2 to 1 teaspoon of tahini. Close the date, and when finished all dates, place them in the freezer for about an hour.
  2. Melt the chocolate in a double boiler on the lowest setting. When the chocolate has almost completely melted, remove from heat and stir gently. 
  3. Remove the dates from the freezer. Using a slotted spoon or a dipping tool, dip the dates one at a time into the melted chocolate and place them on parchment paper. Before the chocolate can set, top with bright green pistachios and a pinch of flake salt.
