Medjool Date Pumpkin Spice Jack O' Lanterns

Ingredients

  • 12 Natural Delights® Medjool dates, pitted and roughly chopped
  • 1 cup raw pecans
  • 1/3 cup raw walnuts
  • 1/4 cup Old Fashioned oats/rolled oats 
  • 1/3 cup pumpkin purée
  • 1/2 teaspoon pumpkin spice emulsion (or 1 teaspoon pumpkin spice powder)
  • 1 teaspoon vanilla
  • 1/4 teaspoon sea salt (optional)

Preparation

  1. Place the dates in the bowl of a food processor and pulse for 15 to 20 seconds. Add the nuts and oats, then pulse until just combined, scraping down the sides of the bowl as you go. Add the remaining ingredients, continuing to pulse scraping down the sides of the bowl as you go. When blended, the nuts should be the size of large grains of sand. If the mixture is too sticky, add more oats.
  2. Turn the mixture onto parchment paper, and form into a roll, using the parchment paper.
  3. Slice the roll into about 10 pieces.
  4. Roll into balls and form each one into a pumpkin shape. Now let's decorate. Fun for kids!
  5. Makes 10 balls
