Place the dates in the bowl of a food processor and pulse for 15 to 20 seconds. Add the nuts and oats, then pulse until just combined, scraping down the sides of the bowl as you go. Add the remaining ingredients, continuing to pulse scraping down the sides of the bowl as you go. When blended, the nuts should be the size of large grains of sand. If the mixture is too sticky, add more oats.
Turn the mixture onto parchment paper, and form into a roll, using the parchment paper.
Slice the roll into about 10 pieces.
Roll into balls and form each one into a pumpkin shape. Now let's decorate. Fun for kids!
