Medjool Date Ooey Gooey Popcorn Balls


  • 1/2 cup old fashioned rolled oats
  • 1/2 cup raw cashews or pecans
  • 1 1/2 cup Natural Delights® Medjool dates, pitted and roughly chopped
  • 2 tablespoons mesquite flour (or your favourite flour)
  • 1 tablespoon cacao nibs
  • 1 tablespoon chia seeds
  • 2 cups popped salted popcorn (split up)
  • 2 tablespoons slivered or chopped almonds
  • 1-2 tablespoons brown rice syrup or coconut nectar (if necessary)
  • 1/4 teaspoon sea salt (optional)


  1. Combine the oats and cashews in the bowl of a food processor and pulse for about 5 seconds to produce a rough meal. 
  2. Add Medjool dates to the bowl and pulse another 5 seconds.
  3. Add the flour, nibs and chia seeds and one tablespoon of syrup. Press the pulse button a few times.
  4. Add 1 cup of the popcorn plus the almonds, then pulse 1 or 2 times.
  5. See if the mixture will hold together. If not, add another tablespoon of the syrup and pulse 1 or 2 times.
  6. Pour the mixture onto parchment paper and form into balls. Using your hands, crush the remaining popcorn. Roll the balls in the crushed popcorn. You may need to gently press the popcorn onto each of the balls.

The popcorn can become soft, so serve immediately!
