Medjool Date Raw Energy Bars

Ingredients

  • 2 cups (350 g) Natural Delights Medjool Dates, pitted and chopped (about 20 dates)
  • 2 cups (340 g) raw cashew nuts
  • ¾ cup (96 g) unsweetened cocoa powder
  • ½ cup natural almonds
  • Pinch sea salt
  • ½ cup (36 g) unsweetened shredded coconut
  • 2 tbsp. vanilla extract
  • 3 tbsp. cold water

Preparation

  1. Place the dates, cashews, cocoa powder, almonds and sea salt in a food processor. Pulse until coarsely chopped.
  2. Add the coconut and extract. Pulse again, adding the water a little at a time until the mixture makes a moist but not sticky dough.
  3. Press firmly into a 9 inch square (23 cm x 23 cm) baking dish. Chill for 1 hour before serving.
