Medjool Date Bread

Ingredients

  • 1 cup (175 g) Natural Delights Medjool dates, pitted and chopped (about 10 dates)
  • 1 tsp. baking soda
  • 1 cup (250 mL) boiling water
  • 1 ½ cup (192 g) cups flour
  • 1 cup (200 g) granulated sugar
  • 1 tbsp. butter
  • ½ tsp. salt
  • 1 large egg
  • ½ cup (60 g) walnuts, chopped

Preparation

  1. Preheat the oven to 325 °F/170 °C and lightly grease a 9 x 5 in (23 cm x 12 cm) loaf pan. Place the dates in a large bowl and sprinkle with baking soda. Pour the boiling water over the top and set aside to cool.
  2. Add the flour, sugar, butter, salt and egg to the cooled date mixture, beating well. Stir in the walnuts and pour into the prepared pan.
  3. Bake for 1 hour or until a toothpick inserted into the centre comes out clean.
  4. Let stand for 10 minutes, then remove from pan and cool on a wire rack.
