Medjool Date Bites

Ingredients

  • 2 cups of Natural Delights Medjool dates
  • 1 large red apple such as McIntosh, Cortland, Canada Red, Red Prince, Spartan, Empire, Idared, Ambrosia, or sweeter varietals such as Gala, Fuji, Red Delicious or Honeycrisp
  • Juice of ½ lemon
  • 113 g of semi-hard cheese such as Manchego, Romano or Gruyere, sliced
  • 85 g Prosciutto, thinly sliced, cut into pieces of 5 cm
  • 1 cup arugula leaves 

Preparation

  1. Using a small knife, cut a slice in one half of the date lengthwise. Discard the pits.
  2. Core and quarter the apple. Slice each quarter into thin slices. Sprinkle them with lemon juice.
  3. Fill each date with a torn half or third of a slice of cheese and a sprig of arugula.
  4. Wrap the date with a small piece of Prosciutto. Place on top of an apple slice. 
  5. Arrange all on a serving platter. Top with cracked black pepper, if desired.
