Chicken and Medjool Date Lettuce Wraps

Ingredients

Dressing

  • ½ cup (125 mL) light olive oil vinaigrette
  • ¼ cup (45 g) Natural Delights Medjool Dates, pitted, coarsely chopped (about 4 dates)
  • 1 to 2 cloves of garlic

Salad

  • 2 ½ cups of cold, cooked chicken cut into ¼ inch (0.6 cm) cubes 
  • ⅔ cup (115 g) Natural Delights Medjool dates, pitted and cut into ¼ inch (0.6 cm) cubes 
  • ⅔ cup (113 g) red bell pepper, cut into ¼ inch (0.6 cm) cubes 
  • ½ cup (75 g) green onion, sliced 
  • 12 small butter lettuce leaves
  • ¼ cup (30 g) toasted slivered almonds

Preparation

  1. Purée all the dressing ingredients in a small blender or food processor until smooth. Cover and refrigerate until ready to serve. (May be prepared several days ahead and stored tightly covered in the refrigerator.)
  2. Place the chicken, dates, bell pepper and green onions in a medium bowl. Drizzle with the dressing and toss well to coat.
  3. Spoon equal amounts of the chicken mixture into lettuce leaves and sprinkle with the almonds.
